Our Garlic Naan is prepared using a traditional recipe that has been perfected over years of serving Calgary's Indian food enthusiasts. We start with a dough made from refined all-purpose flour (maida), yogurt, milk, a pinch of sugar, salt, and baking soda. The dough is kneaded until smooth and elastic, then left to rest, allowing it to develop the perfect texture. When ready to cook, small portions of dough are rolled into oval or teardrop shapes and brushed with water on one side.
The wet side is then slapped against the hot inner walls of our traditional clay tandoor oven, where it adheres and bakes at extremely high temperatures (around 700-900°F). The intense heat creates those characteristic bubbles and char spots that give naan its distinctive appearance and flavor. Within minutes, the naan puffs up beautifully and develops a slightly crispy exterior while remaining soft and chewy inside. As soon as it's removed from the tandoor, we brush it generously with melted butter and sprinkle it with freshly minced garlic and finely chopped cilantro. The residual heat releases the aromatic oils from the garlic, creating an irresistible fragrance.
